Motivational Monday #5-Start TODAY

Good Morning!!! I hope everyone enjoyed their Easter weekend! Ours was wild and crazy with family in town but Amazing!! I love spending time with my little family, they are the most important thing to me!!
My family is my whole world and my main reason I started being a Beachbody coach because I want to be able to spend a lifetime with them and do everything my kiddos wanted me too! I love that I can go out and jump on the trampoline, ride bikes, play hopscotch, hike, camp, and more. It was important to me not to be that person who said I will start again next week?? I wanted it to be NOW and so Beachbody gave me accountability, I knew if I was helping others achieve their goals it would be easier to help myself too. I LOVE being a COACH and helping others achieve goals they didn’t think they could do!! 
So, today is MONDAY, how many more are you going to waste and say “I’ll start next week?” Hope your answer is NONE! And start your health journey with me Today!! I would love to connect with you and help you achieve goals you didn’t think were possible!

Turkey Lettuce Wraps

21 day fix approved lettuce wraps
Okay, so I am always looking for a good lettuce wrap recipe because well they are one of my favorite meals. So, when I saw this one that was 21 day fix approved, I thought awesome lets try it. It is not like your normal California Pizza lettuce wraps (which are my favorite) but they are still delicious, I thought I better share the recipe with all of you. I hope you enjoy them as much as my family and I did!
 
Turkey Lettuce Wraps
21 Day Fix 1 red, 1 green
makes 6 lettuce wraps
Ingredients
1 ½ lbs. lean ground turkey (at least 93%)
1 tsp. garlic powder
½ tsp. sea salt
1 tsp. ground cumin
½ tsp. dried oregano
1 tsp. chili powder
1 tsp. paprika
½ medium onion, finely chopped
½ green bell pepper, finely chopped
¾ C water
¾ C tomato sauce, no sugar added (4oz)
1 large lettuce leaf, washed, and dried (per serving)
1 C fresh cilantro
medium tomato, chopped
cooking delicious turkey lettuce wraps

Preparation 

 
First, in a large nonstick skillet add the turkey and cook over medium heat, stirring frequently until no longer pink.
Then add the garlic powder, cumin, salt, chili powder, paprika, and oregano, mix well, add the onion and bell pepper.
Cook for about 4-5 minutes or until onion is translucent, then add water and tomato sauce.
Bring to boil, reduce heat to low.
Cook, covered for about 10-12 minutes.

Top each lettuce leaf evenly with turkey mixture and top with tomato and cilantro.

Motivational Monday #4-In Need of a Change

Good Morning and Welcome to Monday!! Do you ever feel like you are stuck and you don’t know how to get out of the rut you are in? Well, I know that feeling I was eating unhealthy, not exercising and feeling my pants getting tighter by the day so, I had to make a big decision to change. Was it easy? NO! But I was not willing to keep going down the road I was on. I wanted to show my family and myself that I can do it, I can change! I knew it would be hard and do I still have bad days? Absolutely, I am not perfect, far from it but I am trying and it may be PAINFUL at times but I know I don’t want to go back to that rut again!! Hope everyone can get out of their rut, if you ever need someone to help you, I would love to help you start your journey too!! Hoping everyone has a great week and starts thinking about what journey they want to go on!

Grilled Chicken with Edamame Noodles

This has been a crazy week for me and I needed a quick, simply but healthy dinner for my family. And I know there are a lot of people like me that just dread going home from a crazy day at work or a crazy weekend and have to think of WHAT is for dinner?? Right? So, I am sharing a very quick (only 4 ingredients), simple but healthy dinner with you today just in case you need an answer to the famous question, WHAT is for dinner?? Enjoy!!

 
 
 
Ingredients
Serves: 4
 
4 raw skinless, boneless Chicken breast
8 oz of Edamame Spaghetti
1 1/2 C All Natural Alfredo Sauce
3 C of broccoli 
 
 
 
 
Preparation
1. Boil 8 cups of water. Add spaghetti and simmer for 4-5 minutes or until cooked through. (while spaghetti is simmering start step 2 ).  Once spaghetti is done rinse under cold water. 
 

2. Start to grill your chicken until mostly cooked. Take off the skillet and cut into strips. Place back on the skillet until full cooked, no pink. 

3. In a saucepan heat up Alfredo sauce, or place in a microwave safe dish and heat up sauce. 

4. Place broccoli, I used organic frozen broccoli, in a microwave safe dish or in a saucepan with some water and cooked until warm. 

5. Divide the Edamame Spaghetti into four and place onto four individually plates, add sauce, chicken on top of spaghetti, served with a side of broccoli.

Working on Hammer and Chisel

As you know my hubby decided to join me on my health and fitness journey and I LOVE having him work out with me and motivate me to always PUSH a little harder!! He is also working on his own health and fitness journey. Jared (my husband) has always been fit and able to eat whatever he wanted (lucky for him, right?) but now that he is getting a little older it is starting to catch up with him and he is now having to do what I have done forever and actually watch what he eats and workout a little harder!! 

Jared decided he really wanted to get his six pack back and feel healthier overall! I think it all started when we booked our trip to Hawaii and he realized he wanted to look and feel great on the beach! So, he decided yes it was time to get serious and start a Beachbody program! He watched me with a few and decided he really wanted to try Hammer and Chisel with me! So, far we are 22 days into the program and he is already seeing results, AMAZING!! I can’t wait to see what the 60 day results will be!

Motivational Monday #3-Never Give UP

Okay, Okay TODAY I really need to hear some motivation! Spring break is over, ugh… and now back to my crazy busy schedule!! I need to just repeat after me… can do this, I can do this!! haha!! Plus, with the spring ahead hour change, ugh… I am seriously exhausted!! Well, I think this might be the longest week of my life!! So,  Here is to MONDAY everyone and ENJOY some motivation with me!!

Zucchini Spaghetti with Meatballs

So, I had a bag of organic zucchini in my fridge, it is kind of a staple at our house because I love zucchini. I love it almost as much as pasta, so I thought I would try zucchini spaghetti because it is just so much better for you then pasta and I am really trying to cut pasta out of my diet!! It turned out so delicious I decided to share it with all of you guys! Enjoy!! 

Looking for a delicious dinner, look no further here you go!
Zucchini Spaghetti with Meatballs 
Serving Size: 2
21 day approved: 1 green, 1 red, and 1/2 purple container  

Ingredients

3 small zucchini, I used yellow and green
Organic spaghetti sauce, I used Wild Oats Organic Parmesan & Romano Pasta Sauce
6 Organic Chicken meatballs, I used Coleman Basil & Roasted Garlic chicken Meatballs from Costco
dash of salt for the water
fresh Parmesan cheese, garnish on top of spaghetti 

Preparation

1. First cut your zucchini up into spaghetti spirals
2. Get a pot fill with water, add a dash of salt to the water, then place zucchini in and boil until soft. 
3. Drain the zucchini well with strainer
4. Put cooked zucchini back into the pot and add your spaghetti sauce (depends on how saucy you want it but I used a little over a half a bottle), stir up together
4. Last add your Meatballs (if you use the ones I used, first microwave each meatball for 10 seconds), stir up a little. 
5. Serve warm and garnish with fresh Parmesan cheese

This is seriously a very quick, healthy , and most definitely delicious dinner!!

Workout Wednesday

Welcome to HUMP day!! Today is the day I always think I can I make it to FRIDAY!! Ugh.. Why does Friday, Saturday, and Sunday speed by but the rest of the week is on SLOOOW mode!!?? But do you know something that helps me get through each and every day, my WORKOUTS. Yep, you read that right my workouts help me so much! I have noticed since I started working out everyday that I am more focused, have more energy, sleep better, and have an overall better attitude! Working out makes me feel so much better about myself, that I think I have a better out look on everything around me!! 

Now, working out has not always been something that I loved to do or even liked to do but I decide to try the 21 day fix program awhile back and it is true anything you do for 21 days can become a habit. But, in all honesty it became a habit but it definitely took a lot longer for me to LOVE it!! haha!! But I knew it was good for me and I really needed to keep working out if I wanted the results I was looking for, even now I LOVE to workout but I am still not at my goal, so I keep pushing harder everyday because I know I want to be in the best shape of my life and I know working out and eating healthy will get me there!! 

Working out is not an overnight fix! It takes time, determination, patients, dedication, and a positive attitude that you know you can and will do it!! Like Autumn Calabrese always says “It is not easy, but it is worth it”!! I totally agree with her! Working out is not easy and it shouldn’t be but I know I will be happy that I did it and I pushed through and now I am seeing results!

AWE…Welcome to Motivational Monday. Today is a good day it is SPRING BREAK for my school district which means I am still home in my pj’s, drinking my cup of Joe with my hubby!! IT is perfect!! But I know most of you are not on spring break and Absolutely need some MONDAY motivation!! So, here you go and Enjoy your fabulous week!!

Hammer & Chisel Journey

The Hammer and Chisel journey is continuing and I am SO excited to tell everyone that I have a new partner to workout with my AMAZING husband has decide to join me in the HAMMER & CHISEL journey!! And to be the supportive wife I am, I decide to start over (and yes I was more than half way done) so we could be on the same workout everyday and encourage each other to keep pushing.
 Let me tell you it has been so fun! Yes, we are just working out but we are doing it together and it makes this journey that much more special and exciting for me! Hammer and Chisel is not easy and I noticed sometimes when it was too hard… I would just not push myself as hard but with someone working out with me, I noticed I AM PUSHING HARDER!! I see him doing it and think well if he can, so can I!! Yes, he is stronger and I do have to modified a little but I am definitely pushing harder and in the end I will see better results!
For those who don’t know my husband let me tell you a little background on my AMAZING man.. he has always been extremely active but has been out of the game for a bit. hehe! But what my husband LOVES is anything Extreme, I mean extreme! He likes doing anything from snowboarding, dirt bike riding, rock climbing to MMA fighting. So, at first I wondered how he would actually like working out at home with DVDs and not going to the gym! But..he actually really likes working out at home and being able to get it done and not waste a lot of time driving to and from. He is also really enjoying Hammer and Chisel and says he is still pushing himself with the program and getting a great workout! We are now 10 days into the program and are LOVING it and can not wait for the results!!
SO, even if you are someone like my husband who likes extreme or likes to workout at the gym I still think there is a GREAT chance you will love Hammer and Chisel. If you want to try Hammer and Chisel with us, NOW is the time! It is your time to get stronger and more confident in yourself.
