Grilled Fish Fajitas with Mushroom and Pepper

These grilled fish fajitas are to die for delicious

My husband and I like fish for the most part. Sometime it can be a little too fishy for my taste but in these fajitas, the fish was AMAZING. These Grilled Fish Fajitas are roll your eyes in the back of your head good. They make a great dinner for the whole family. Enjoy!

 

Grilled Fish Tacos

Serving size: 4

Ingredients

4-5 pieces of your favorite fish (we used Mahi-Mahi)
2 Tbsp. Avocado oil
1 Tbsp. Garlic, minced
1/2 Tbsp. Fajita Season, we use McCormick’s Fajita seasoning  (you will also need 1/2 to 1 tsp. fajita seasoning for the fish)
1/2 C  mushrooms, sliced
1 green pepper, sliced
1/2 zucchini, cubed
3/4 C shredded cheese
1 C shredded lettuce
salsa
8 soft shell tortillas
*optional- use plain greek yogurt to dollop on top of the fajitas

Preparation

-In a large skillet, saute your vegetables in the  avocado oil with your minced garlic and fajitas season.
-As the vegetables are cooking you will start grilling your fish. Season the fish with about 1/2 to 1 tsp. of the same fajitas seasoning.
-When fish is cooked through and veggies are softened, combing on a fresh soft shell tortilla with shredded cheese, shredded lettuce, salsa and optional plain greek yogurt.
ENJOY!!

Baked Parmesan Zucchini

Well… I think we all know by now that I REALLY do LOVE Zucchini!! So, I have wanted to try making fried zucchini for sometime now but I could never get myself to fry them up, It’s just not healthy but when I saw some baked versions on Pinterest my husband and I knew that they were a MUST try!! So, my husband ran with the idea and created his own version of Baked Parmesan Zucchini! That can I just say was AMAZING!! ENJOY!

Baked Parmesan Zucchini

Great appetizer for any activity or a great side dish!!

Ingredients

4-5 medium size zucchini
2 tsp. oregano
2 tsp. sweet basil
1/2 C parmesan cheese
1 C breadcrumbs
2 eggs
1/2 tsp garlic salt
1/4 tsp chili powder
1/8 tsp. black pepper

Preparation

  1. Get a cookie sheet and cover it with tinfoil and preheat oven to 350F
  2. Cut your zucchini in half and then into thick slices
  3. Get two small bowls, one bowl mix together breadcrumbs, parmesan cheese, oregano, and basil. In the other bowl mix together eggs, garlic salt, chili powder, and black pepper.
  4. Take your zucchini and dip it into the egg mixture then into the breadcrumbs and lay on pan that you covered in foil, repeat until all the zucchini is covered in the batter.prepared-parmesan-zucchini
  5. Place in oven and Cook for 20 minutes.
  6. Serve Warm with pasta sauce to dip in or you could use ranch.

Meaty Zucchini Tortellini

Seriously, need a quick healthier dinner for your family, that they will love? Then you need to try this Meaty Zucchini Tortellini! It is so quick and delicious that you can whip it up for the family in no time!! I hope you enjoy this dish as much as we did.

 

Meaty Zucchini Tortellini

Serving family of 4 with leftovers

Ingredients

1 lb. Ground turkey
img_305712 oz bag cheese filled Tortellini
1 jar Organic Pasta Sauce, we used Romano  Parmesan
½ green pepper, diced
1 medium zucchini, diced
½ C sliced mushrooms
¼ tsp. oregano
¼ tsp. sage leaf
½ tsp. sea salt
¼ tsp. basil

Preparation

First, you need to get a fry pan to cook the meat and vegetables and a pot to cook your noodles. 
*To cook the Tortellini, follow the directions on the noodle package.
In the fry pan start to cook meat, cook until browned and then add vegetables and spices to the meat. Cook it until the vegetables are soft and meat is cooked throughly. img_3073
Then add in pasta sauce to the meat and veggies, bring to a boil then simmer for about 10 minutes.

Once noodles are finish- scoop some into a bowl, top it with the Meaty Zucchini mixture and Sprinkle with some cheese and serve! It is as simple as that! Enjoy.

Parmesan Crusted Mahi-Mahi

Okay so you may not be a big fish fan but know how good it is for you, so you are looking for different ways to eat it!
Well…stop now and try this AMAZING dish my husband created. It makes the Mahi-Mahi fish taste so delicious you don’t even know you are eating fish!! It is a must try.

Parmesan Crusted Mahi-Mahi

Serves 4

Ingredients

4 pieces of Mahi-Mahi
2 Tbsp. Avocado Oil
1 tsp garlic, minced
½ C Parmesan Cheese
1 C bread crumbs
½ tsp. sweet basil
½ tsp. oregano
Dash of ground chipotle

Preparation

First get a small bowl -mix breadcrumbs, parmesan cheese, basil, oregano, and a dash of chipotle .
Get a fry pan and brown the garlic in the oil for about 2 minutes
Mix fish into the bread crumb mixture and place in oil, with the extra bread crumb mixture sprinkle on top of the fish, cook on medium low for about 8 minutes, then flip and brown the other side for about 10 minutes or until fish is done.
Serve warm and ENJOY! This fish is delicious!!

Motivational Monday #29- Enjoy Every Moment

Remember my Friends to Enjoy Every Moment we have with the ones we love and really with all the people that we have surrounded our self with!!
As I am sitting here typing Motivational Monday I am thinking to myself how did I get so LUCKY!? I look around at all the hard times people are going through. All the heartache that some people go through and I think how lucky I am and how grateful I am for my family and friends! I know we grow through pain and everyone handles life differently but we need to remember that there can be good in everything. I must say, I feel very grateful in this moment in time!!
Life is short and we need to ENJOY EVERY MOMENT!! Which, yes can be hard to do sometimes but, enjoying the good moments in life bring us that true joy.
My husband has a new great saying that is my Motivation for the Week and I wanted to share it with all of you. I hope it gets you thinking that not everything that happens, just happens. I firmly believe things happen for a reason. You may not understand that reason at first, especially  if it cause you pain but I am sure one day you will.
I hope every one has a Wonderful week and try to Enjoy every Moment!

Healthier Banana Bread

Healthier banana bread

One thing I love for breakfast is warm banana bread with butter!! But I also know that most banana breads are high in fat and not so good for you. Over the years, I have tried so many recipes from very healthy to not so healthy and have adapted some into my own banana bread recipe. It still has some butter but much less than most, that is why I am calling this a Healthier banana bread! It is still delicious with much less fat. Enjoy!

 

Healthier Banana Bread

Makes one loaf of bread

Ingredients

4  Ripe bananas, smashed
1/3 C melted butter
1 C  Organic sugar
1 organic egg-beaten
1 1/8 tsp. vanilla
1 tsp baking soda
pinch of salt
1 1/2 C organic flour
  • I use organic ingredients when I can, you don’t have to use organic.

Preparation

  1. Preheat oven to 350F and spray loaf pan with non-stick  spray, set aside
  2. Smash the bananas into a large bowl, mix butter into smashed bananas
  3. Mix sugar, egg, and vanilla into the mix
  4. Sprinkle baking soda and salt over mixture
  5. Last add the flour- mix well
  6. Pour mix into loaf pan, bake for 1 hr. (toothpick should come out clean)
  7. Serve warm and ENJOY!!

Healthy Tip #4- Exercise

Okay so lets talk Healthy Tip #4-EXERCISE!!

Exercise is one of those things that I think most people know it is good for you but don’t like or even HATE doing it. But let me share with you some facts of WHY I need to exercise, just in case you need a few reasons to get up and move with me! 

So, the TOP 5 most important reasons for me to exercise are:

Number 1: IT improves my mood and helps me relive the stress  from the day

Any type of physical activity can stimulate different brain chemicals and make you feeling happier and more relaxed (which lets be honest, who doesn’t want to feel like that)
Also, exercise makes me feel better about myself , which totally helps my mood and how I feel about myself and how I look.

Number 2: IT boost my energy and makes me want to do more through out my day

Have you ever just felt like you want to just lay down on the couch and not move after a long day , yeah me too! But actually if you get up and exercise you will boost your endurance. Exercise helps your cardiovascular system work more efficiently, which in return helps you have more energy throughout your day.

Number 3: IT helps me control my weight

I am not one that can just watch what I eat and not gain weight. My family  likes to have treats once in a while and so I MUST workout to keep the weight off. I know from experience exercise is key for me to control my weight especially the older I get, ugh..
Okay so in reality I don’t have time to do long workouts that take hours to do. Thankfully I don’t need to do that either (most people don’t). Really, as long as I get my heart rate up for 30 minutes daily no matter what I am doing. It defiantly helps me control my weight because I am increasing my metabolism and helping it work faster!

Number 4: IT helps me sleep better

Heaven knows I need all the help I can get with sleep, so fortunately exercising helps me sleep better and wake up feeling more refreshed. Actually, this might be my number one reason, haha!!

Number 5: IT helps me stay health

I have never worried about blood pressure, high cholesterol, heart disease, or anything like that. But the older I get the more aware I am becoming of those things. Honestly, they scare the crap out of me. So, good thing I know some ways to help fight them. You guessed it, one way is through EXERCISE. 

So, bottom line….

I know exercise is important for my overall health. I know I need to be doing it daily. But what I have learned over the years is that it doesn’t have to be this long process every day. It can be a 30 minute activity daily and honestly everyone can spare 30 minutes a day for your health, right??
If you haven’t worked out or exercised in years and are scared to try,  just start off simple: go on a walk around the block, take stairs instead of the elevator, go to a water aerobics class. But get moving because every little bit help!!

**Also it is very important to remember before starting any new exercise to check with your doctor, especially if you have not exercised in a while.

Motivational Monday #28- Great Day

Wow!! Time is flying by and I forgot to do Motivational Monday last week!! Ugh.. I was so busy with family in town and my birthday weekend, that it just came and went. Sorry!!! But I am back to help Motivate you to make it a Great day and great week and hope you all had a good week, last week!!
So, any who I love this time of the year. It is my favorite when the weather starts changing and I can start wearing jeans and sweaters (my favorite)! I love everything about Fall and I can’t wait for it to continue to get colder, but not too cold because on the flip side I don’t like winter! haha!!!
Remember to be amazing today, well everyday for that matter and to Make Today count!!

Homemade Chili

Homemade Chili

It is that time of year where you are ready for sweaters, football, and Homemade CHILI, right? I think so too! I LOVE fall and I LOVE all the things that come with fall including the food! This Homemade Chili is so easy, you just throw everything into the crockpot and let it do all the work.
Enjoy!

 

Homemade Chili

Serves a family of 4 with leftovers

Ingredients

1 lb. ground turkey or beef
1 Can (14.5 oz.) red kidney beans
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
2 cups beef broth
1 (14.5oz) can diced tomatoes
1 tsp. chili powder
1/2 tsp. paprika
1/2 tsp. mustard powder
1 1/2 tsp. cumin
1 tsp. ground chipotle
1/8 tsp. ground red pepper
1/2 tsp. salt
1/8 tsp. celery salt
1/8 tsp. turmeric
1/2 cup shredded cheese (optional)
1/2 plain greek yogurt (or sour cream, optional)

 

Preparation

  1. In a large fry pan add ground meat and brown.
  2. Once your meat is browned, place it into the crockpot, and add  all the ingredients in the crock pot. Stir.
  3. Cook on high for 4 hrs. or low for 6-8 hrs.
  4. Serve warm, sprinkle shredded cheese on top with a dollop of plain greek yogurt (or sour cream)
