Cranberry Eggnog Smoothie

Remember I told you all I was on the lookout for fall/winter smoothies!! Well, I think I found a great one for you this winter!! It is SOO good. It is like having a little bit of Christmas spirit in a cup. With the hint of eggnog and cranberry, it makes me think of the holidays!! Which is just what I was looking for. This smoothie is a great snack or dessert, it might not be the healthiest breakfast, with ice cream in it but definitely a healthier dessert than most holiday desserts.
Holiday cheer is a cup, that is also healthier for you!

Cauliflower Au Gratin


Cauliflower Au Gratin is the best way to eat cauliflower!!
So, one of my favorite vegetables is cauliflower but that is also one of my husband’s least favorite. Ugh… So, I was determined to find a recipe that my husband would tolerate eating cauliflower. Then, I remembered a recipe my mom use to make when I was little that I loved. I tested it out and LUCKY for me he LOVED it, bonus my daughter loved it too! So, now I can have Cauliflower anytime, as long as I make this dish!! Yay for me!
So, if you are not sure about cauliflower, then for sure try this dish or if you LOVE cauliflower like me you MUST try this dish, it is Amazing!! Plus, it has a little Italian twist to it which pairs perfect with some grilled chicken!

Cauliflower Au Gratin

Enjoy this savory dish that makes a simple vegetable into something incredible!
Recipe type: vegetables, cauliflower, side dish
  • 4 Tbsp. Olive oil
  • 1 Tbsp. anchovy paste
  • 1 Tbsp. capers, drained
  • 4 garlic cloves, thick sliced
  • ½ tsp. fresh rosemary, chopped
  • ¼ tsp. red pepper flakes
  • ⅛ tsp. black pepper
  • 1 tsp. fresh parsley
  • 1 lb. cauliflower florets pieces, parboiled 3-4 mins
  • 3 Tbsp. Italian bread crumbs
  • 3 Tbsp. grated Romano cheese
  1. Get a large pot and parboil cauliflower 3-4 mins., drain, and set aside.
  2. In a large fry pan, add oil, garlic, anchovy paste, capers, peppers, and spices, stir. Cook 2-3 mins. medium heat.
  3. Add cauliflower to the fry pan and brown.
  4. Put cauliflower mix into a baking dish, sprinkle with bread crumbs and grated cheese.
  5. Place under broiler, 5-6 mins.
  6. Serve warm and ENJOY!

Refreshing Fruit Water

Refreshing fruit water!!

Water!! Yes, it is water but so much better than plain old water! If you remember I did a post a while back about the importance of water and why you NEED to be drinking it. But I know what you are thinking, water is boring, water has no flavor but you can make water FUN and DELICIOUS, I promise. This Refreshing fruit water is AMAZINGLY yummy. You will want to drink water all day long with these simple few steps!! Bonus: MY KIDDOS love drinking water NOW too!!
If you are thinking of a New Year’s  Resolution for this year, start NOW and make it DRINKING more Water!! You will be amazed at the difference your body will have if you start drinking more water Today!

Refreshing and delicious fruit water for everyone to ENJOY!!
Recipe type: water, drink, fruit water
  • glass of water
  • crushed or cubed ice
  • handful of raspberries
  • handful of sliced strawberries
  • splash of Sugar free Coconut flavoring
  1. Simply get a cup of your choice, I like ones with a lid and straw so I can take it everywhere I go!
  2. Put a handful of raspberries and sliced strawberries at the bottom.
  3. Add your ice (crushed or cubed)
  4. Fill up with water to the top.
  5. Optional add a splash of your Coconut flavoring (add to your liking).
  6. Drink and ENJOY!
You want to mix things up? Try adding different fruits to your water. Blueberries, mangos, oranges, cranberries, peaches, etc.
Also, you can add any flavoring you want, Coconut is just my Favorite!

20 GREAT Elf on the Shelf Ideas

Okay so Thanksgiving is almost over and my kiddos can’t  hardly wait for their amazing and fun elf and her reindeer to return this year!! YAY!! Plus, they are hoping she will bring the new dog that was just introduced with her too! YAY again!!
But I know for some of us,  YAY!! is not what we are feeling about the elf returning to our house especially after 4 long years with the cute little elf but my kiddos are sure happy! And that is why she keeps coming back.
So, I thought it would be a perfect time to help out some elf friends with fun ideas our elf  has come up with or found on Pinterest at Midnight!! LOL!! I hope these help and make the holidays with your elf less stressful and have more YAYs! for everyone in the family!!

Welcome from our elf on the shelf

Our elf likes to Welcome us with a Breakfast full of snowman pancakes, donuts, milk, and candy canes (nutritious, right). Plus, she always bring a small gift for each of the kids and a new book! Some of the gifts she has brought were Christmas shirts, socks, slippers, or a Christmas movie.

Our elf is a little bit of a crazy girl and she wrapped the kids’ bathroom’s toilet!! It was a great wrapping job! Plus, she brought them a little gift for the day.

She is always thinking about others and helping out by feeding the dinosaurs with the toy dump truck and the dog food.

Kids made Gingerbread houses and the elf was very kind and Spelled out in Cotton balls that she loved them!

Our elf LOVES to play with the other toys in the house and this night she had toilet paper, rolling down the stairs contest! Looks like Barbie won that race!

She LOVES when my daughter bakes for her. So, every year she ask for her to bake something, looks like she was craving cookies this time!

I think she loved the cookies, plus a note. She is so sweet.

Oh No! Not sure if they are playing or mad but the dinosaurs have tied her up and are ready to attack!

Okay, sometimes she can be a little bit mischievous but all in good fun! She and some friends “decorated” the bathroom with toilet paper!

She must have been in the mood for some chocolate and at the same time made some ELF MILK and decorated the cartons!

Brought a fun painting activity for the kids to do! My kids LOVE it when she brings them something to do!!

Making some Fruit Loop necklaces with some friends! Plus, left some cereal for the kids to have breakfast or make their own necklaces too!

Trying to build a house with some Lincoln Logs. 🙂

Brought the kids some mini donuts to “build a snowman”! They LOVED this!!

Funny little elf and reindeer!! She had red and green tape and wrote on the toilet, HO, HO, HO, Who has to GO? Haha!

Playing dress up with some  girlfriends, plus looks like Hulk and Spiderman wanted to join in on the fun!

Feeding the dinosaurs again but in a safer manner this time, especially after they tied her up. Looks like she might lock them up this time! LOL.

Goodbye from the Elf

This is one way our elf said Good Bye to the kiddos, she placed sticky notes all over the kitchen with saying on them like Be good, I am watching, love you, Be kind, Thinking of you, etc. The kids loved it and keep the notes.

Grilled Chicken Parmesan

Try this delicious dinner tonight-Grilled Chicken Parmesan

I love Italian food, it is probably my favorite kind of food but I don’t eat it as much as I would like because it is normally high in calories. So, when my husband thought of a great healthier version of Chicken Parmesan, I was SO excited to try it. And let me tell you this dish did NOT disappoint! It may be healthier but still full of amazing flavor. We will be adding this to our meal plan rotation for sure!
You need to try this easy, healthy, and amazingly delicious Grilled Chicken Parmesan tonight, especially if you are a fan of Italian food!!

Grilled Chicken Parmesan

This is a healthier easy version of an all time favorite Italian dish.
Recipe type: pasta, grilled chicken, parmesan
Cuisine: Italian
  • 3-4 chicken breast, skinless and boneless
  • dash of sweet basil, oregano, salt, and pepper
  • 1 tsp. minced garlic
  • favorite jar of marinara, 25oz.
  • whole wheat spaghetti noodles, 1 box, 14.5oz.
  • ¼ c fresh grated parmesan cheese
  1. In a large skillet, grill 3-4 chicken breast with minced garlic. While grilling season chicken with a dash of sweet basil, oregano, salt, and pepper.
  2. While the chicken is cooking, in a large pot bring water to boil, once boiling add your spaghetti noddles, follow cooking directions on noodle box.
  3. In a small pan warm your marinara sauce.
  4. Once chicken is cooked, cut up into small strips, set aside.
  5. Place your desired amount of pasta on a plate, then cover noodles with the marinara sauce, place grilled chicken on top and sprinkle freshly grated parmesan cheese on top.
  6. Serve warm and Enjoy.

Amazing Green Bean Casserole

Amazing Green Bean Casserole, just in time for Thanksgiving Oh my goodness I can’t believe Thanksgiving is NEXT week!! I swear it was Halloween yesterday?? Time just flies by! I am so glad I get to share with you today, just in time for your Thanksgiving feast, this AMAZING Green Bean Casserole, which I have to say is my favorite dish for Thanksgiving!!
This recipe is so easy you can whip it up in no time and have it on the table for everyone to enjoy!! Plus, they will think you are amazing because it is so good, yet so easy for you to prepare. I hope you and your family enjoy this Green Bean Casserole as much as my family did. Enjoy!!

Green Bean Casserole

The Best Green Bean Casserole and so simply to make!
Recipe type: green beans, thanksgiving, casserole
  • 2 cans of cut green beans, drained
  • 1 can of Cream of Mushroom soup
  • ¾ c milk
  • ½ tsp. sweet basil
  • ¼ tsp. black pepper
  • ½ tsp. minced garlic
  • 1⅓ c French's Crispy Fried Onions
  1. Preheat oven to 350.
  2. In a 1½ qt. baking dish, mix in soup, milk, basil, garlic, black pepper.
  3. Stir in green beans and ⅓ c crispy fried onions.
  4. Place in the oven and bake for 30 mins. Stir.
  5. Top with the remaining 1 c crispy fried onion. Place back in oven, bake for 5 mins., until onions are golden.
  6. Serve warm.
  7. Enjoy!

Pumpkin Spice Frappuccino

I love Coffee and Pumpkin so this is a perfect drink for me! Okay I LOVE COFFEE, I mean I REALLY LOVE COFFEE! So, to mix coffee with pumpkin what is better than that right? It is like a cup of happiness for me!! I was so excited to make this Pumpkin Spice Frappuccino at home and not have to break the bank to enjoy this awesomeness!!

Pumpkin Spice Frappuccino

Perfect Fall drink that is super yummy-Pumpkin Spice Frap for your enjoyment!
Recipe type: coffee, pumpkin, pumpkin spice
  • 2 c Coffee, partially frozen
  • 2 tbsp. canned Pumpkin puree
  • ¼ tsp. pumpkin spice
  • ¼ tsp. vanilla extract
  • 2 tsp. sugar, or stevia for lower calories
  • ½ c skim milk
  • low fat whip cream, or fat free, optional
  • dash of cinnamon, ground
  1. In a blender mix all your ingredients together, coffee, pumpkin, pumpkin spice, vanilla, sugar, and milk, Blend until smooth and creamy.
  2. Pour into a glass, top it with whip cream, dash of cinnamon and serve immediately!
  3. Enjoy!!

Easy Crockpot Chicken Pot Pie

the best crockpot chicken pot pie!!

Okay who doesn’t LOVE Chicken Pot Pie? No one right?? It is such a comfort food, plus delicious. But I will be honest I never make it. One I didn’t have a great recipe and two I always thought it was hard to make but in reality it is super easy to make and NOW I have an amazing recipe, so it is game on for me and some comfort food! 🙂
This recipe is so easy, you seriously  just throw all the ingredients into the crockpot and let it cook (well there is a few more steps, but they are easy too!!).
I hope you and your family ENJOY this delicious recipe as much as my whole family did!

Easy Crockpot Chicken Pot Pie

Recipe type: comfort, chicken, pot pie
Cuisine: American
  • 4 large chicken breast, skinless and boneless
  • 1 large can (22.6 oz.) cream of chicken
  • 1 small can (10.5 oz.) golden mushroom
  • 5-7 small Yukon gold potatoes
  • 1 bag of frozen vegetable, we only used peas, corn, and carrots mix (but you could add green beans)
  • 1½ tsp. sweet basil
  • ½ tsp. oregano
  • ¼ tsp. black pepper
  • 1½ tsp. minced garlic
  • ¼ tsp. sea salt
  • 1 tube Pillsbury biscuits-Souther Homestyle Original
  1. Get your crockpot out and place the 4 chicken breast on the bottom of the pot.
  2. Then add the potatoes, vegetables, and all the seasonings, top with the soups.
  3. Cook for 4-6 hrs. on High, if you can stir it around half way done (2½ to 3 hrs.)
  4. Once it is done cooking, stir and take chicken out to cut up into pieces, place chicken back into the crockpot, stir.
  5. Preheat oven to 350.
  6. Get a 9x13 baking dish, pour chicken pot pie mixture into the dish.
  7. Roll the biscuit out to cover the top of the dish. Bake for 30 mins or until golden brown on top.
  8. Remove from oven let cool for about 5-10 mins.
  9. Serve and ENJOY!

Pumpkin Spice Muddy Buddies

try these yummy treats- Pumpkin spice muddy buddies

This is a  fall twist to one of OUR family’s favorite treats! Pumpkin Spice Muddy Buddies! In this house we LOVE Muddy Buddies and to add some pumpkin to that OH Yeah! Why not? Sounds delicious to me!!
At first my little guy was kind of hesitant, he thought it was crazy to mess with something that was already delicious, haha! So, I first made a small batch of it, he tried it, LOVED it, and we HAVE to make a big batch! We honestly devoured it before the night was over, it’s just that good! 🙂
I think it might be on the weekend list of things to make! 😉

Pumpkin Spice Muddy Buddies

A Fall Twist to a delicious family favorite!
Recipe type: treats, fall, pumpkin
  • 9 c Rice Chex
  • 1 c semisweet chocolate chips
  • ½ c peanut butter
  • ¼ c butter
  • 1 tsp. vanilla
  • 1 tsp. pumpkin pie spice
  • 2 c powdered sugar
  1. In a large bowl, measure out the cereal, set aside.
  2. In a medium size, microwavable bowl, microwave chocolate chips, peanut butter, butter, and vanilla. Microwave uncovered 1 minute, stir and repeat at 30 seconds until completely melted.
  3. Pour mixture over cereal, stir until cereal is evenly covered.
  4. In a gallon resealable food storage plastic bag, pour in 1 c powered sugar and ½ tsp. pumpkin pie spice, place half the mixture into the bag, close bag, shake until all the cereal is well coated. Place on waxed paper to cool.
  5. Repeat the last step with the remaining cereal mix, sugar and pumpkin pie spice.
  6. Enjoy!

Pumpkin Banana Smoothie

Okay I LOVE smoothies in the summer they are so refreshing on a hot day. They are also a great way for me to trick my kiddos into getting some fruits and veggies, haha! But in the fall and winter we really don't drink them much and I think we all miss them. So, when I saw a fall version of a smoothie on Pinterest, I thought heck ya, we are so trying this Pumpkin banana Smoothie out.
Pumpkin Banana Smoothie

Enjoy this refreshing Fall Smoothie!
Recipe type: smoothie
Serves: 1 smoothie
  • 1 banana
  • ½ c pumpkin puree
  • 8-10 ice cubes
  • 6 oz. vanilla greek yogurt
  • ½ tsp. pumpkin pie spice
  • ¼ tsp. cinnamon
  • 2 tsp. organic sugar, honey, or agave nectar
  • 4 tbsp. milk
  • topped with whipped cream and a sprinkle of nutmeg
  1. In a blender, combined banana, pumpkin puree, ice cubes, yogurt, spices, sugar, and milk. Blend until smooth.
  2. Pour the smoothie into a glass, top with whip cream, sprinkle on some nutmeg, place a straw in, and serve immediately!
  3. ENJOY!!
