Skinny Coconut Lemon Cocktail

I was in need of a new drink for New Year’s this year, I am bored of the same old drinks, plus I needed something that I wouldn’t feel as guilty drinking. So, my husband and I decided to create a new drink out of some of my favorite things, coconut, lemon, and vodka!
It took a few tries to get the mixture right but I think we have got it down now! It is so delicious. What I LOVE about it is that it is sweet with a little sour kick, plus almost calorie free (besides the vodka, no calories!). SO, looking for a fun new drink this year for New Year’s? Try this AMAZING Skinny Coconut Lemon Cocktail, it won’t disappoint.
*sidenote This drink is also PERFECT for everyone at the party, just leave out the liquor and the kiddos will LOVE it too! This drink has not only been mommy tested but kid approved too!

Pomegranate Winter Salad

I love salads but in the summer, right?? Salad is not something I think about much in the winter months. But for some reason I have been craving a Salad, so I thought why not a Winter Salad, it would be fun to have some fruit in a salad that is ripe in the winter, like oranges (which I have NEVER tried in a salad before). So, I headed to the store to see what I could find. I was actually surprised by the fruit section. So, for my salad decided to get apples, oranges, green grapes, and pomegranate arils with some baby spinach.
I think I can safely say I am ADDICTED to this salad and might be having it for lunch for awhile! haha!! IT is so good and refreshing. It is just sweet enough to almost forget how good it really is for you! I will be off now to EAT my absolutely amazing Winter Salad!
Looking for a delicious salad for winter! Well you have found it.
